From working the line to plating dishes on the aft deck, my culinary journey has taken me across the globe — from Los Angeles to Tokyo and the French Riviera. I’ve had the privilege of cooking in Michelin-starred restaurants, aboard private yachts and within exclusive private estates. Each chapter has shaped the chef I am today: one who values simplicity delivered with precision and a deep respect for seasonality. I’ve since returned to the UK — to my hometown of Newcastle — where I now live with my young family, creating produce-led menus that blend rustic charm with refined flair and bold flavour.
